چکیده | ||
چکیده زمینه مطالعاتی: در این پژوهش به بررسی ویژگیهای فیلم فعال زیستتخریبپذیر بر پایه ژلاتین و کربوکسی متیل سلولز با غلظتهای مختلف عصاره رازیانه) (Foeniculum vulgaer (0، 2، 4 و 6 درصد وزنی ) پرداخته شد. هدف: بررسی تهیه فیلم های خوراکی قابل استفاده در بسته بندی مواد غذایی و فراوری جدیدی برای جایگزینی مواد پلیمری و افزایش ماندگاری و کیفیت مواد غذایی است. روش کار: ویژگیهای فیزیکوشیمیایی فیلمهای فعال تولیدی در سه تکرار )3(n= با نمونه گیری کاملا تصادفی انجام شد. آنالیز واریانس یکطرفه (ANOVA) و مقایسه میانگین دادهها براساس آزمون چند دامنهای دانکن با استفاده از نرم افزار SPSS26 در سطح احتمال) 05/0( انجام گرفت. نتایج: کمترین میزان حلالیت و ضخامت به ترتیب در تیمارهای 6% و4% مشاهده شد. بیشترین نفوذ پذیری و کدورت بترتیب در تیمارهای فیلم های حاوی 4% و 2% عصاره رازیانه مشاهده شد. بالاترین میزان استحکام کششی و ازدیاد طول در نقطه شکست و مدول یانگ در تیمار 4% درصد بود. در تمامی تیمارهای فیلم خوراکی خاصیت آنتیاکسیدانی با استفاده از رادیکالهای DPPH معنیدار بود (05/0>p). کمترین و بیشترین فعالیت آنتی اکسیدانی مربوط به تیمار شاهد و 6% به ترتیب با فعالیت آنتی اکسیدانی 5% و 17% بود. نتایج ارزیابی فعالیت ضدمیکروبی فیلم نشان داد که بیشترین قطر هاله بازدارندگی در غلظت 6% مربوط بهPseudomonas aeruginosa با متوسط قطر هاله mm 5/24 و سپس,Staphylococcus aureus Escherichia coli به ترتیب mm83/13و mm 33/12گزارش شد. نتایج کلی: افزودن عصاره رازیانه در غلظت 6% باعث تولید فیلمهایی گردید که علاوه بر مهار رشد و تکثیر باکتریها دارای خواص مکانیکی مطلوب موجب بهبود خصوصیات آنتیاکسیدانی فیلم ترکیبی شد. | ||
